Job Summary
Runs back of house (BOH) operations and shifts, including supervision of kitchen, dish and all other BOH teams as well as the preparation, presentation and service of menu items. The Sous Chef’s primary focus: overseeing the line during service and running the best shift; also updates and maintains side work, organization and cleanliness of dish area; leads BOH pre-shift meetings and participating in line, temp and cooler checks and food tastings for the shift; and oversees all closing kitchen duties such as breaking down the line, closing down coolers and employee areas.
Essential Functions
- Oversee and run BOH operations, ensuring smooth and efficient food prep, cooking, and kitchen management.
- Maintain proper food storage, quality, and presentation standards, including temperature control.
- Coordinate with management and chefs to assign prep duties and ensure adequate production levels.
- Conduct regular line checks to uphold food quality and safety standards.
- Assist with inventory management, supply ordering, and vendor deliveries.
- Monitor BOH employee side work, ensuring compliance with all sanitation and safety regulations.
- Track and help control food costs while maintaining efficiency.
- Facilitate clear communication between FOH and BOH regarding food production, timing, and special requests.
- Assist in hiring, onboarding, training, and supervising BOH employees and kitchen teams.
- Provide coaching, performance evaluations, and disciplinary action as needed.
- Ensure compliance with all company policies and legal regulations, including safety and sanitation standards.
- Address repair and maintenance needs to maintain kitchen operations.
- Work a flexible schedule, including early mornings, late nights, weekends, and occasional travel.
- Operate all necessary kitchen tools, equipment, and restaurant management software.
- Lift up to 50 lbs., stand/walk for an entire shift, and work in various environmental conditions.
